If you have many environment variables and especially if they're meant to be secret, you can use an env-file:

When a command with CMD or ENTRYPOINT is specified in the Dockerfile, this command gets executed when running the container. Now, if this command can finish without requiring any input, it will finish and the container will exit.

@dmakovec definitely not deleting the question/answer. Why? Because my staging environment in all aspects is a mirror of my production env, but for "whatever" reason my issue persisted on production, but was/is still irrelevant on staging.
16 @KevinBurke: Do export PASSWORD=foo instead and the variable will be passed to docker run as an environment variable, making docker run -e PASSWORD work.
